Foil Meal
Quesadillas

Ultralight Joe's Moose Goo

Foil Meal

Utensils Needed:
  • Potato Peeler
  • Knife
  • Aluminum Foil (Heavy Duty)
  • Tongs
Ingredients:
  • 2 lbs. ground beef
  • 4 potatoes
  • 6 carrots
  • 1 can beef broth
  • 1 head of cabbage
  • garlic powder

Peel potatoes and carrots. Cut them into 1/4" slices. Cut 1 piece of foil 18" Place 1 leaf of cabbage on one side of the foil (i.e. so you can later fold the foil in half). Place potatoes, carrots and beef on cabbage leaf. Season to taste and add 4 spoons of broth. Cover with another cabbage leaf. Fold foil in half and roll edges of foil to seal 3 open sides. Place on coals for 15 minutes per side. Heat an additional 10 minutes if not done.

Quesadillas

Utensils Needed:
  • Skillet
  • Spatula
Ingredients:
  • non-stick spray
  • 2 tortillas per quesadilla
  • 1/4 shredded cheese per quesadilla
  • Salsa

Spray skillet lightly. Add tortilla. Sprinkle tortilla with cheese. Cover with second tortilla. Cook until golden-brown on each side. Add salsa as desired. (Chicken can also be added with the cheese, if desired)

Baked Apple

Utensils Needed:
  • Apple Corer
  • Aluminum Foil
Ingredients:
  • apple
  • cinnamon
  • sugar

Core apple. Peel top section. Fill core with cinnamon and sugar (or try mini-marshmallows, bananas, chocolate chips ,or nutmeg!) Wrap in aluminum foil. Bake apple approximately 1 hour. Eat and enjoy!

Cheese Crackers

Utensils Needed:
  • Cardboard Box Oven
Ingredients:
  • 1 cup cheddar cheese
  • 1 stick butter
  • 1 cup flour

Shred Cheese. Cream the cheese and butter together. Add flour. Make one large flour ball. Keep dividing into smaller flour balls. Flatten flour balls on ungreased cookie sheet. Bake in cardboard box oven for 15 mins. at 350 degrees.

Ultralight Joe's Moose Goo

Ingredients:
  • 2 parts honey
  • 2 parts corn flour (NOT corn meal!)
  • 1 part peanut butter

Mix thoroughly (this will take some time). Pack into a Coghlan's Squeeze Tube (Academy, REI, etc.) Below 40F, Ultralight Joe's Moose Goo becomes impossible to squeeze out! Open the tube from the back and spoon it out when that happens, or pack it in wax paper or tortillas and eat it like a candy bar.

Single Squeeze Tube Proportions (2-3 lunches w/ large tortillas):
  • 8 tbsp honey
  • 8 tbsp corn flour
  • 4 tbsp peanut butter
