Two Can Jambalaya
Instant Baked Potato

Two Can Jambalaya
  • 2 envelopes spaghetti sauce mix
  • 1 envelope onion soup mix
  • 2 beef bullion cubes
  • 2 cans rice (or 1 lb.)
  • 1 lb. summer sausage, cut into bite-size pieces
  • 6 cups water
In a 4 quart pot with lid, bring the water to a boil, then mix in all of the remaining ingredients and cook until the rice is done (about 20 minutes). If you are cooking it on a backing stove you are going to have to stir it to keep it from burning on the bottom (but try not to stir too much or the rice will get mushy). Add the contents of a little packet of crushed red pepper (like what you get when you order a Pizza Hut pizza) or a little Tabasco sauce for flavor!

Instant Baked Potato

Ingredients:
  • 2 cups instant potato flakes
  • 1-2 tablespoons freeze dried chives
  • 1/3-1/2 cup bacon bits
  • 1 pkg Butter Buds
  • 1/2 pkg. cheese sauce mix
  • 1/2 cup dry milk
  • 1/2 teaspoon salt
  • 1 tablespoon coffee creamer
  • 1/4 cup sour cream mix
  • pepper to taste

Combine all ingredients in a freezer ziploc bag. Bring 3 1/2 cups water to boil, and then add to dry ingredients and mix thoroughly. Let sit 2-3 minutes to develop flavor.
